Raisin Nut Muffins!!!

These muffins were a big hit with alot of my family, they're delicous and nutritious!!! Acually they are low carb, low fat, and almost sugar free... what more could you ask for!? yummmm(:
The only bad part is that none of the measurments are exact because i sorta just add stuff to taste and texture and stuff so make sure you taste the batter before you cook these!! Oh yes I know its so difficult to taste the dough! Hehe I'm a major dough eater/spoon licker!!!


about 1/4 c oat flour
about 1/2 c vital wheat gluten
about 1/4 c soy flour
about 1/8 c low carb bake mix(if you don't have it then you could probably just use that much more of another flour)
about 1/2 cup vanilla protein powder
1/4 tsp. salt
about 3/4 c sweetener( i used stevia but you can use whatever makes you happy)
about 1/4 c sugar free maple syrup
1/4 tsp. maple exctract
3/4 tsp. cinnamon
1/4 c peanuts
1/2 c raisins
1/4 c plain or vanilla fat free yogurt
1/4 c fat free sour cream
3/4 c egg beaters (or 3 eggs)
about 1/2 c skim milk
1/4-1/3 cup fat free half and half(you could probably use skim milk in place of this if you want)




- Mix all the ingredients together and it should be a pretty thick consistency you don't want it to be major runny.. yuckk!
- Divide the batter into 12 muffin cups and bake at 350 degrees for 20-25 minutes or until you can stick a toothpick in and not get dough on it.
- Let cool and enjoy!!!

Heyy!! My names is Hanna and i have only started a blog once on live journal and no one ever read it so i made this one :) well... hopefully people read it but i kinda feel like an idiot making it because its a 99.9% chance that nobody but me will be reading this soo.. yeah. Anyway I really want to own a bakery one day.. or something like that. p.s All of these recipes are originaly mine that I will be posting on here, or they will be recipes that I have edited to make healthier/my own.. and if they are not i'll make sure to give whoever made the recipe credit for it (:
